  5. Years ago I waitressed in a pub & one of their weekly specials was skirt steak. I had a customer who said he loved skirt steak on fajitas or tacos but he found whole skirt steaks tough. I told him to order it and I would show him the “secret” to a tender skirt. When it came to the table I asked him how he was going to cut it- of course because of the length he went to cut it with the grain. I stopped him and showed him how to cut it. He enjoyed his dinner and raved about it to his wife and I scored one of the best tips I ever got! They became loyal regulars on skirt steak night.

  8. I always make fajitas out of skirt steak. And yes, they must be cut AGAINST the grain to be tender. Cook them hard, hot and fast and they do not need to be pounded. Its super beefy in flavor and super satisfying. I always eat the entire steak. Left overs are not that great to me. It used to be really cheap but not any more. I’d cook it 4.5 to 5 minutes TOPS!!! Overcooked is shoe leather.

  12. Hi Anita!! Skirt steaks are almost impossible to find here in Michigan as well. I came upon them at a very small grocery store known for his meats, ONCE!!!! That’s it! I wish I could find them again! The Bearded Butchers have a video in which they talk about them, they are on the underside of the ribs of the cow, (there is not a lot of it per cow) and it used to be they’d grind it up into ground beef or toss it! Now they do save and sell it as skirt steak! Pretty cool I thought! Yes, I wish more stores would carry them! It was tasty!!!!!
    I have LOUSY LUCK cooking steak in my 2 air fryers, one died and one I still have. I just cannot seem to get meats to come out nice and juicy as compared to my cast iron. I much prefer my cast iron over the air fryer for overall taste. Maybe it’s because I don’t have a Ninja, I’m serious there! The most I use my air fryer for is like a toaster oven. Sad, but true. I make shaved beef into chips and also do fry up chicken skins which there are never enough of those! Lol!!!! I’ll intentionally buy chicken thighs IF on sale just for the skin! Lol! Yes, eventually we’ll eat the meat, most often using Nili’s breading she’s come up with the recipe for, but in lard on the stove in my cast iron pan, again!!! Lolol!!!
